Yellowfin tuna is caught, seasonally from May to November, in warmer waters associated with the Gulf Stream off the coast of Nova Scotia by the same vessels that longline swordfish. This species of tuna is often marketed as ahi, derived from the Hawaiian word ʻahi, a name  that is also used in Hawaii for the closely related bigeye tuna.

Fresh Yellowfin tuna should appear red in color, never brown. Yellowfin tuna is widely used in raw fish dishes, especially sashimi. This fish is also excellent for grilling. Yellowfin is often served seared rare.

Available in steaks, partial loins or full loins .
