Cedar Planked Salmon


Have you ever tried cedar planked salmon? You can easily make this delicious dish at home.  Ingredients such as garlic & ginger and soy sauce & maple syrup help impart tremendous flavour, and the cedar plank enhances the salmon with a nice, smoky taste. Soaking the wood not only imparts great flavour, but also helps keep the cedar plank from burning and will help steam the fish as it cooks.   

INGREDIENTS:

2 lbs salmon fillets
1 cup maple syrup
2 TB finely grated gingerroot
4 TB fresh lemon juice
3 TB soy sauce
1 ½ tsp minced garlic
Greens from 1 bunch of green onions
Salt & pepper to taste
1 cedar plank

INSTRUCTIONS

In a heavy saucepan, combine maple syrup, gingerroot, lemon juice, soy sauce, salt, pepper and garlic. Simmer for 30 minutes to reduce to 1 cup.

Soak cedar plank in water, wine or cider for two hours

Heat grill to 350 degrees.

Place plank on cold side of grill, cover with greens and place salmon, skin side down on the greens, brush with glaze. Reserve remainder of glaze as a serving sauce.

Cook for 20 minutes or until done, depending on thickness of fillet.

Serve with roasted vegetables or basmati rice and side salad.
