Fresh marlin will have a light pink to red orange colour with a distinct dark red bloodline. The flesh will be firm and springy. Frequently used as sushi/sashimi, excellent grilled, baked, fried, sautéed or even smoked. Slightly oily, mildly sweet flavour.
