Our Chum salmon is sourced from British Columbia and is flown in fresh and filleted here in Nova Scotia.

Chum salmon is one of the largest species of Pacific salmon, second only to Chinook salmon in size, growing as large as 35 pounds, although they usually average 8 - 15 pounds. They are found throughout the North Pacific Ocean and range from the Canadian Arctic coast and throughout the northern coastal regions of Notrh America and Asia. When in the ocean, chum salmon are metallic greenish-blue along the back with black speckles, similar to both sockeye and coho salmon.

Nutritionally, chum has a lower fat content than sockeye and chinook, giving it a milder, more delicate flavour while still providing comparable sources of omega-3 fatty acids, as well as essential micronutrients like selenium, niacin and B121.

Raw, Chum salmon is orange, pink or red and is paler in color that coho, sockeye, or king. Color is highly dependent upon area of capture as the flesh becomes paler when it returns to fresh water to spawn.

Its lower fat content and milder flavour means chum is well suited for those who may not like the intense flavour of sockeye and for recipes that retain moisture such as curries and chowders. It is fantastic grilled or broiled, especially when marinated.
